Picture, tender white meat chicken with grilled peppers, black beans, and sweet corn– all steamed to perfection with chipotle ranch dressing and topped with crunchy tortilla strips.

That’s the souwthwest-style chicken. I tried it for the first time the other day and was happy with not just the flavor, but how easy it is to make. I also really like the combination of textures and the fact that it is only 260 calories! It’s found in the freezer aisle, and is a convenient way to enjoy a variety of salads without having to buy a ton of ingredients.

Inside the package: chicken and vegetable mix (which goes in the microwave for two and a half minutes), dressing, and a crunchy topping.

While the chicken and veggies are in the microwave, you can thaw the dressing by putting it in a cup of room temperature water, or by kneading while running under water.

There is a recommendation for what type of lettuce to purchase and for the southwest style chicken it is recommended to be paired with Romaine lettuce for an extra crisp. I didn’t realize this until I got home and instead bought this Spring Mix at the grocery store. It will be good for about 4 salads, and the entire package is only 15 calories.

Even though it wasn’t the specific type of lettuce recommended, it still tasted really good with the Lean Cuisine Salad Additions.

I enjoyed a zero calorie, cherry flavored seltzer water making this entire meal only 264 calories (counting the lettuce). Also, there was plenty of dressing, so it wasn’t as though it was a dry salad that was low in calories.
